
One of the things I cannot live without anymore is our simple solar cooker. Whenever you have the time during the day, just chop together some vegetables and put in the fridge, which you then set out in your solar cooker before going to work the following morning. The food will then be ready by noon or for the evening meal, depending on how you want it. This week’s specialty was a simple favorite I hadn’t made for a long time: Mashed yam, served with fried eggs and tomatoes.

Yam recipe (4 persons)
½ chopped yam (medium size)
salt
pepper
1 dl of water
- put in solar oven for 4 hours, then take out and add:
2 dl of milk
garlic
fresh basil leaves
- Serve with fried eggs and fresh tomatoes!

For breakfast, we normally serve solar cooked millet with milk and bananas. The typical merge between Sweden and Niger, you know! By the way, Nigerien green bananas are the best! Still interested in breakfast, N1?
