As we’re always looking for some way of varying our food, I was thrilled when Anette suggested we try to make our own solar baked carrot cake! As most things are in our case, it was a new experiment, but as turned out so well on the first try, we just had to share the recipe. So here goes!
Anette’s Carrot Cake Recipe
Mix the following inexpediences:
2dl of sorghum flour
3dl of wheat flour
1 teaspoon of baking powder
1 dl sugar
a touch of salt
2 grated carrots
2 dl milk
Mix all the inexpediences, place in a black bowl (no other color works) and set out in the solar over.
4 hours later, take it out and enjoy!

About the cake, sorry but we invited our neighbor JMackie for a piece, and seeing it was a success, there’s none left! I have to make another one though… Or where you thinking about feeding all your daily niger1.com visitors? Ah, now that would require more than ONE oven and unfortunately, one solar oven is all I have!
