I seem to have two cravings in Niger: chocolate and cheese (both pretty hard to come by). The recipe above was inspired by pasta leftovers in combination with a very strong cheese craving. Need I say that the end result, which included garlic-fried basil leaves, fresh tomatoes, Eden nuts and cream sauce (in addition to pasta & cheese!) did not leave us disappointed…?

Follow-up comment rss or Leave a TrackbackYour photos of your meal creations make my mouth water. My daughter-in-law who is in Tibiri with the Peace Corps craves chocolate also, so I send her M&Ms now and then (as well as dried fruits).
I just discovered your blog a few days ago and I have read all of your posts (from December 2006). You write so vividly that I feel as if I am there. The posts about your mother brought tears to my eyes as it made me think of my mother who is now in heaven. Sometimes your writing is downright lyrical. My youngest son and his wife are with the Peace Corps and will be there until Oct. 09, and I really miss them, so reading your blog gives me a sense of things they are experiencing. Well done!
